There isn’t anything more hearty and good for the soul than a delicious warm pot pie. Easy (Unless you make it from pure scratch. That shit takes time) one pot meal. You receive all that you need in one nutritious meal. This can obviously be made with animal based products, but you know how ya girl does it. I plant based it! One can add seitan meat or no meat at all and just vegetables. It’s up to you, but whichever way you make it. I promise you. You won’t be disappointed. Enjoy!
GOOD FOR THE SOUL POT PIE
Ingredients
1 package of 2 pie crusts shells
1 1/2 cups of mushroom gravy
1 1/2 cups of vegetable broth
2 cups of diced carrots
2 cups of peas
2 cups of green beans
2 cups of corn (optional)
2 cups of potatoes any kind diced
1 Tbsp of onion powder
1 Tbsp of garlic powder
1 Tbsp of thyme
1 Tbsp of rosemary
1 Tbsp of parsley
1 Tbsp of sage
1 tsp of salt
2 tsp of black pepper
2 cups of seitan strips ( can be found at certain retailers)
1 Tbsp of butter
1/2 cup of olive oil
Directions
If you are using a deep dish pan then this recipe will work perfectly. If not, then you might have to cut all the measurements in half for a regular sized pie pan. Deep Dish pie pans and already prepared deep dish pie crusts can be found at your grocery stores. Mix all of the vegetables, seasonings, broth, oil, butter, and gravy in a mixing bowl. If the gravy isn’t done already. Don’t worry. Just add it to the pot pie mix with water. It will create the gravy while it is cooking in the oven. Preheat the oven to 425F while you prepare the crust. If the crusts isn’t already in the pan, then you’ll have to lay one in the pan. Once that is complete, add the mix to the crust. Place the top layer of the pie crusts on top of the mix. Fold the edges and cut away the access dough. Use a fork or spoon if you want to make the pie crust edges pretty. Cut four slits in the middle of the pie so, that it can vent. Place the pie on a baking sheet, so that if it spills over it won’t make a burning mess. Spread butter on top of the crust if you want, but it’s not necessary. Cook the pie for 45 mins or for an hour if its animal based. Take it out and allow it to cool. Slice it and enjoy!
