Cheezy Corn grits with Andouille Sausage

What a United States southern treat! Growing up my family especially my father’s side of the family would cook on a regular grits. As a kid I would just add sugar and butter to my grits and that was all I needed. Yummy! But, as I became older my taste buds did as well. I started to wonder what the whole thing was about putting cheese and garlic in your grits. Well let me tell you, I’m glad I pleased my curiosity with trying this southern home style delicious dish for the soul. Grits can be eaten anytime of the day. But, for breakfast/brunch this is the ticket!

Ingredients

3 cups of corn grits or Quacker grits

1 cup of kernel corn fresh or frozen

1 tsp of salt

1 Tbsp of pepper

8 cups of water  

1 cup of nutritional yeast

1 Tbsp of garlic seasoning or minced fresh garlic

3 cups of shredded vegan cheddar cheese

2 Tbsp of vegan butter

Andouille Sausage pepper fry

     1-2 packs of Tofurky vegan andouille sausage

     4 sliced peppers (green, orange, red, and yellow) Do whatever mix

     1 Onion sliced

     ½ cup of water

     ½ cup of olive oil

Cheezy Corn Grits

Directions

Bring 8 cups of water and salt to a boil. Once the water starts to boil, stir in the grits and the corn.  Let the grits cook according the original instructions on the package. If it’s the instant kind, the one I like. Then cook that shit uncovered for 5 minutes. Then Bam!

Once creamy and soft in texture. Please do check before we proceed. Add the cheese, seasonings, and nutritional yeast. Let the corn and grits cook for another 5 -10 minutes. Turn it off and let it sit. Then serve, but if you want it with the sausage then wait…

Andouille Sausage pepper fry

Directions

Add the olive oil to the frying pan. Add the sausage, peppers, and onions to the pan. Sautee the sausage and vegetables on med-low heat. You’ll know that they’re done when the vegetables start to look soft and juicy. The meat will be brown with a little fried crust. Perfect Muah! Add a ½ a cup of water to the pan to give this creation a little gravy. Let it simmer on med-low heat for 10 minutes.  Once done, pour over your cheese grits and serve. Bon Appetit!
