STUFFED SHELLS N’ SAUCE

What’s for dinner?! Add this one to the menu. This healthy plant-based and tasty dish is sure to make your taste buds thank you! This meal can also be vegetarian with dairy products instead of plant based. Enjoy!

Stuffed shells N’ Sauce

Pasta Shells

20-30 large pasta shells boiled

Stuffing Ingredients

6 cups of plant based or dairy cream cheese

2 cups of fresh basil leaves

3 cups of spinach

2 Tbsp of Italian seasoning

1 Tbsp of oregano

1 Tbsp of thyme

1 Tbsp of basil

1 ½ Tbsp of pepper

2 tsp of sea salt

1 cup of vegan or dairy parmesan cheese

5 cloves of garlic minced or 2 Tbsp of garlic powder

2 Tbsp of onion powder

¾ cup of olive oil

Sauce it up!

10 cups of tomato sauce

2 Tbsp of Italian seasoning

1 Tbsp of oregano

1 Tbsp of thyme

1 Tbsp of basil

1 ½ Tbsp of pepper

2 tsp of sea salt

2 Tbsp of garlic powder

2 Tbsp of onion powder

¾ cup of olive oil

3 tsp of sugar

Directions

Pasta Shells

First things first. Boil the pasta shells to perfection according to the package. Once those are soft al dente style. Drain the water but keep it and place it to the side. Take the shells and place them in the refrigerator overnight so that they’ll be firm for stuffing the next day. You can always wait a few hours as well for them to be slightly firm.  

Stuffing

The best part before the next best part. Use food processor or blender if needed be to puree the stuffing mixture. Add all the ingredients into the mixer and blend until smooth. To increase the smooth texture and consistency gradually add a few cups of noodle water to the mix. Now it’s time to stuff the shells. Add some olive oil to the bottom of the casserole dish. Stuff the shells with the stuffing and place the shells upside in the dish. Now it’s time for the sauce.

Sauce

Add olive oil to the pan and warm it up on low. Pour tomato sauce and the rest of the ingredients to the pan. Simmer on medium heat and stir occasionally until ready. Once the sauce is done. Pour the sauce over the shells and make sure the shells are covered. To add a little pizzazz sprinkle plant-based/dairy mozzarella and/or parmesan cheese on top (optional) and bake on 375F. Bake for 25-30 minutes.

Once it’s done let it cool and serve. Enjoy!
