Sweet Potatoes are magically delicious. Add some honey, butter, sugar, and you’re set. You can even eat these by themselves. Healthy due to the beta-carotene that you receive from ingesting these. I used this recipe to convince my kids to eat carrots and sweet potatoes when they were babies. Hehehe! I love sweet potatoes. There are various ways to eat these. Once upon a time these were considered non-perishable. They were given to the hogs. African Americans that were enslaved had to use sweet potatoes and make do in order to eat. Originally called “Candied Yams.” As a tradition African Americans prepare this southern dish for the holidays or special occasions. I’m sharing my family’s recipe that we’ve used since the beginning. A little different due, to better products being used, but the traditional taste that we love is still there.
SWEET CANDY RED TATOES
6-8 red or regular sweet potatoes
2 cups of dark or light brown sugar
1 tsp of salt
1 cup of pure cane sugar
2 tsp of vanilla extract
1 1/2 tsp of cinnamon
1 1/2 tsp of mace
1 1/2 tsp of nutmeg
1 1/2 tsp of allspice
1 1/2 tsp of ginger
1 cup of orange juice
1 stick of vegan butter
Directions
Peel the skin from the potatoes. Once that is done, slice the potatoes into circle rounds. Grab a skillet and place it on the stove. Add the butter, sugar, vanilla extract, orange juice, and the seasonings into the pan. Simmer for 5 minutes on medium heat. Once the butter has melted completely. Add the sweet potatoes. Fold the potatoes into the sauce. May have to add a little orange juice in order for the potatoes to not stick to the pan and also develop a sauce. Let the potatoes cook until they’re soft and the sauce looks like liquid gold. Allow them to cool and then serve. These should taste like candy! Enjoy!
